Abstract

Ushbu maqolada, oziq-ovqat zanjirida mikrobiologik xavfsizlikni taʼminlash bo‘yicha zamonaviy yondashuvlar, laboratoriya va protsessual texnologiyalar, monitoring va izlanish usullari hamda ularni amaliyotga joriy etishda yuzaga keluvchi muammolar tahlil qilinadi. Asosiy eʼtibor — tezkor aniqlash metodlari (molekulyar va biosensorli usullar), whole-genome sequencing va metagenomik yondashuvlar, yangi termal bo‘lmagan va kombinatsiyalangan (hurdle) jarayonlar, hamda zamonaviy kuzatuv-tracing tizimlari (maʼlumot almashinuvi, raqamli izlash) ga qaratilgan.
