Abstract
Ushbu tezisda qovoq urugʻining (Cucurbita pepo L.) funksional xossalari, uning tarkibidagi biologik faol birikmalar (toʻyinmagan yogʻ kislotalari, fitosterollar, tokoferollar va oqsil fraksiyalari) hamda ularning inson organizmiga fiziologik taʼsiri ilmiy asosda tahlil qilingan. Qovoq urugʻining antioksidant, yalligʻlanishga qarshi, antidiabetik va gipotenziv xususiyatlari, shuningdek, ularni funksional oziq-ovqat mahsulotlari hamda parhez qoʻshimchalarini yaratishda qoʻllash istiqbollari yoritilgan.
